Perfect for a picnic or your weeknight table! This low carb salad combined crunchy cucumbers with a tangy sauce to become the perfect Summer side dish. Feel free to play around with the sauce ingredients until they taste good to you. I love a tangy, acidic sauce to compliment the mellow cucumbers.
Creamy Cucumber Salad- Serves 4 (as a side dish)
3 English cucumbers, sliced thin
sea salt
1/2 small red onion, sliced thin
Sauce:
3/4 cup sour cream
4 Tbsp apple cider vinegar
2 tbsp fresh dill, chopped
1/2 tsp garlic powder
3/4 tsp pepper
squeeze of liquid stevia (I use this one)
Slice and place your cucumber in a single layer on a paper towel.
Sprinkle with sea salt.
Allow to sit for 20-30 minutes to draw out the moisture.
Then, pay dry to remove all the moisture and residual salt (watch video above for clarity on this process).
Slice your onion and set aside.
Combine all of the sauce ingredients in a large bowl and mix until well combined.
Taste for seasoning and feel free to make this sauce your own!
Add the cucumber and onion to the sauce and fold together until everything is combined.
Refrigerate for 1-2 hours or serve immediately.
I have found this doesn't keep well in the fridge for more
than a day or so.
