LOW CARB, HIGH PROTEIN Vanilla Fruit Smoothie

 This smoothie has become an obsession. By obsession I mean I'm eating it 5 out of 7 days per week to break my fast and I LOVE IT! It's super creamy like a milkshake and my recipe makes a BIG smoothie. Like 32 ounces, big! It's nutty and fruity and smooth with a touch of sweetness. Plus it packs a big protein punch at 58 grams of protein! This smoothie keeps me full for HOURS. Highly recommend if you are looking for a low carb, high protein lunch or breakfast. Try it and tell me what you think!


Exact ingredients I used


Low carb Vanilla Fruit Smoothie- Serves 1 

6-7 ice cubes
2 scoops of low carb protein powder, I use ISOPURE protein powder
1/2 cup frozen fruit blend (pictured above)
2 Tbsp hemp hearts
3 Tbsp unsweetened coconut
1 cup unsweetened vanilla almond milk 

Add ingredients to your blender and blend for 60 seconds or until all ingredients are incorporated together. Enjoy!

Old Fashion Daiquiri

It's been awhile since I have posted a cocktail but we are right in the middle of Summer and I thought it was a good time to post the best Summer cocktail ever! With only a few ingredients this one is easy to make but oh so delicious! Use a good quality white rum and definitely use fresh lime juice- it makes a difference, and make your own simple syrup. That will ensure a great cocktail the first time and every time.

Old Fashion Daiquiri- makes 1
8-10 ice cubes
2 oz of white rum
1 oz lime juice
1 oz simple syrup (recipe below)
lime slice for garnish
martini glass

To make a batch of simple syrup combine 1 cup of water with 1/2 cup of Swerve Sweetener in a small saucepan. Heat over medium heat and stir until the sugar dissolves. Remove from the heat, allow to cool then add to a mason jar or a tuber ware and keep in the fridge.

Chill a martini glass by filling it with ice and cold water. Let it sit as you make the cocktail.

In a shaker add the ice cubes, rum, lime juice, and simple syrup. Shake for 20 seconds.
Spill out the cold water from your martini glass. Pour the mixture through the strainer into the martini glass and garnish with a slice of lime.

*Tips*
- If this is not strong enough add another 1 oz of rum.
- If this drink is too strong mix in some plain club soda until you get the desired strength.

low carb Pumpkin Spice Coffee


Fall is here! All I see everywhere is Pumpkin Spice- how about you?? Ever want to just indulge already? Because I definitely do! But as I always say, don't break your low carb lifestyle for one coffee. You will regret it! Instead just find a healthy alternative that can fit into your low carb diet.  And that is exactly what I have brought to you today!
Use the exact ingredients I have used and you will have yourself a guilt-free Pumpkin Spice Coffee that is low carb and low calorie compared to it's coffee shop competition.

low carb Pumpkin Spice Coffee- Serves 1
10 oz brewed coffee
2 Tbsp half and half
2 Tbsp International Delight, Sugar Free, Pumpkin Spice Coffee Creamer
1 Packet Truvia
1/16 tsp Pumpkin Pie Spice
Whipped cream for topping
1 cinnamon stick (optional), for stirring

In a mug of your choice (Link to the one in my video HERE), add the Truvia, half and half, and coffee creamer. Then add in the hot coffee and stir.
Then add one thin layer of whipped cream. Sprinkle the pumpkin pie spice onto the whipped cream.
Then add one more thin layer of whipped cream. Pop in the cinnamon stick and Voila! Sip away guilt free and enjoy the Fall day! ENJOY!

low carb Root Beer Float



When I first started my blog my plan was to take everyday foods and transform them into a low carb dish that any low-carber could eat and not feel like they were depriving themselves. I have done a lot of that on this blog and also through my YouTube videos and just the other day I was craving yet another high carb, high sugar treat so I set out to recreate it in a way us low-carbers can enjoy. So today I bring you the LOW CARB Root Beer Float!  If you use the right ingredients you can have yourself a sweet treat without any of the guilt. I hope you guys enjoy this one and I also hope you're all having a great Summer!

low carb Root Beer Float - Serves 1
1/4 cup vanilla bean Halo Top ice cream
8 oz Diet A&W Root Beer

Simple as can be- add your ice cream into a glass, top with soda, enjoy with a spoon and a straw!

lil carb Irish Coffee


In honor of Saint Patricks Day I am sharing my favorite restaurant dessert drink to order!
This boozy coffee drink is so easy to make at home and it really warms your belly.  If you are enjoying this at night and don't want the added caffeine just brew up some decaf coffee and you will be good to go!  As always- if you like your coffee a certain way with cream versus no cream, no sugar, more sugar- do whatever you enjoy this is exactly how I like to enjoy my Irish coffee but the beauty of cooking and eating and drinking is enjoying everything the way that you like it :)

lil carb Irish Coffee- Serves 1
6-8 oz coffee (decaf or regular)
1/2 - 1 shot of Whiskey - Jameson or Jack Daniels are my favorite (add as much as you prefer)
1-2 packets Truvia (about 1-2 tsp)
Half and Half - optional
whipped cream for topping
ground nutmeg
ground cinnamon

Brew your coffee.
Add the sugar and whiskey to the bottom of your mug.
Pour coffee in.
Stir well.
Add half and half if you are using it.
Stir again.
Top with whipped cream and sprinkle with cinnamon and nutmeg.
Sip and Enjoy!

lil carb Shamrock Sip


Per Drink:

Saint Patricks Day is this week! Wow this year has flown by!  In my effort to remain festive for the holiday this year I decided to share a recipe for a spin-off of the Shamrock Shake found at McDonalds.  I know anyone on a low carb diet OR anyone looking for a skinny alternative to this shake will absolutely love this recipe. This lil sip will literally change your life- not your weight! Stay on track with my version and you will satisfy your craving without any of the guilt!

lil carb Shamrock Sip- Serves 1

2 oz half and half
4 oz unsweetened almond milk
1 tsp vanilla extract
1/4 tsp peppermint extract (I used a little less than a full 1/4 tsp)
2 ice cubes
2 drops green food coloring
2 packets of Truvia

In a blender combine all of the ingredients and blend for 20-25 seconds.
Serve in a small glass or mason jar.
Garnish with whipped cream and ENJOY!

lil carb Cafe Mocha



Do you like hot chocolate? Do you like coffee?  Have you ever tried the flavors of the two mixed together?! If not then you need to try my Cafe Mocha!  This was my go-to coffee drink to get from Starbucks but with SO many carbs I decided to play around and recreate this recipe at home. Low carb of course!  Tastes like a sinful treat but totally low carb! And if you like chocolate you should definitely try this drink!

lil carb Cafe Mocha- Makes 1
16 oz coffee, hot or iced
1 Tbsp unsweetened cocoa powder
3 packets Truvia, or favorite low carb sweetener
1 Tbsp heavy cream 
Whipped cream for topping, optional

Brew or buy your coffee, add in Truvia and cocoa powder and mix well. I mix with a spoon to try to incorporate the cocoa powder into the coffee. Then add the heavy cream and stir in.
Top with whipped cream and a dash more cocoa powder, take a sip and ENJOY!

lil carb Cinnamon Roll Coffee



I love fancy coffee drinks. They always taste amazing! But they come with a price tag of high calories and high carbs. I decided to try to make a simple coffee drink at home to satisfy my fancy coffee shop drink craving and this recipe works! It tastes sinful and decadent BUT it is low carb.  
Great for your morning cup or a pick me up in the afternoon- that's exactly when I have been drinking this!
These are my favorite kind of recipes- simple, easy, and low carb!  
Plus if you make this at home you are also saving $$!  


lil carb Cinnamon Roll Coffee- 1 serving
16 oz of black coffee - hot or iced
2 squirts of liquid stevia, or your favorite liquid sweetener.
2 Tbsp half and half
1/2 tsp cinnamon, plus extra for presentation
Whipped cream, optional

Buy or brew your coffee.
Add in your sweetener and half and half.
Mix.
Spoon cinnamon into coffee and stir, the cinnamon will not fully dissolve but mix it the best you can.
Top with whipped cream and a dusting of cinnamon.

Hint: If you get coffee at Starbucks you can make this drink by ordering a black coffee and going to the sugar/milk kiosk in the cafe- there they have cinnamon and half and half just remember to bring your favorite sweetener!
