My Favorite Low Carb Smoothie!

There are days when I just need a good smoothie. They satisfy my hunger, fast. Plus I can pack them full of all the yummy stuff and then just sip it down on the go.  I love this smoothie because it keeps me full for a long time. It combines fiber, protein, fat, and greens for a really well balanced smoothie! Here's how I make mine! I suggest everyone calculate the macros based on the exact ingredients you are using to make sure its accurate. Grab your blender and lets go!! Low Carb Smoothie- Serves 1
4-5 ice cubes
1 cup spinach
1/4 cup blueberries (frozen if you can!)
2 scoops low carb vanilla protein (mine is 0 net carbs)
1/4 tsp of flax (add more if you're used to flax- if you're not, start slow to not upset your stomach)
1 Tbsp unsweetened almond butter
1 cup unsweetened almond milk

*Optional ingredients I used in the video*

The BEST Fish Tacos Ever!

My EASY fish tacos just might be your new go-to weeknight dinner! 
OR make em on Sunday for a relaxing night in with a few LOW CARB MARGARITAS!

EASY Fish Tacos- Serves 4
Fish:
2 lb cod filet 
Cajun spice
olive oil 

Fish Taco Sauce:
1/2 cup sour cream
1/3 cup mayo
the juice of 2 medium limes
1 tsp garlic powder
2 tsp sriracha sauce

Toppings:
shredded cabbage and carrot slaw (I use bagged Cole slaw mix)
Pico de Gallo 

Tortillas:

First, prep the fish taco sauce. Mix all the ingredients together well and refrigerate for at least one hour before serving. Feel free to add more or less sriracha depending on your preferred level of spice. 

Then, preheat your oven to 400 degrees Fahrenheit.
Line your baking sheet with foil (if using) and spray with nonstick spray.
Pat the fish dry with a paper towel.
Brush a little olive oil onto both sides of the cod. 
Sprinkle generously with cajun seasoning of your choice. 
Bake for 10-12 minutes depending on the thickness of your filets.
Allow the fish to rest for about 2 minutes then flake with a fork.
Warm the tortillas in a warmer or in the microwave. 
(25 seconds should do the trick on a 1000 watt microwave)
Build your tacos with baked cod, pico de Gallo, some shredded cabbage slaw, and top with the fish taco sauce.

The Best Alfredo Sauce EVER!

Here's some New Years Motivation for 2022... Let's make our food taste good, shall we?! 

Because when our food tastes good, we stick to our plan, and when we stick to our plan we get results, and when we get results we stick to our plan, and then... we REACH OUR GOALS! Woo hoo!

This recipe is just amazing. Tastes like a 5 star restaurant but in reality you can whip this up in minutes using minimal ingredients that you provably already have on hand.

Keto Alfredo Sauce- Makes 4 servings

3 Tbsp butter
3 cloves of garlic, minced
1/8 tsp dried oregano
2 cups heavy cream
3/4 cup finely grated parmesan cheese
1/4 tsp pepper
juice of 1/2 a lemon

In a medium sauce pan melt the butter over medium heat.
Then add your garlic and sauce for about 2-3 minutes, stirring until the garlic is fragrant and the butter is just beginning to brown.
Then add in the oregano and stir.
Pour in the heavy cream and mix well. Adjust heat to medium high.
Allow to come up to a rolling bubble.
Then add the parmesan cheese a little at a time stirring in as you go.
Turn heat back down to medium and allow to slowly bubble and thicken for a few minutes.
Then add in pepper and juice of 1/2 a lemon.
Taste for seasoning.
Serve immediately.

*Reheating later will cause the sauce to separate- It will taste perfect but the look of the sauce will not be the same.

EASY Turkey Meatballs LOW CARB!

 My absolute favorite meatballs. They taste delicious, are perfect for meal prep and do not contain any breadcrumbs! Make them and thank me later! 

Turkey Meatballs- makes 10 

1lb ground turkey
1/2 cup fine parmesan cheese
1 egg
1 tsp garlic powder
1 tsp onion powder
1 tsp Italian seasoning 
3/4 tsp salt 
1/2 tsp pepper
1 Tbsp fresh herbs (either fresh parsley or basil) chopped finely

In a large bowl combine all of the ingredients. 
Roll into 10 balls- I like to use a cookie scoop to make them all the same size.
Place on a baking sheet that has been sprayed with nonstick spray.
Bake at 375 degrees for 20 minutes or until they are cooked through.

low carb Broccoli Cheddar Egg Cups

low carb Broccoli Cheddar Egg Bites- makes 10 egg bites

 9 eggs

1/4 cup heavy cream

2 ounces sharp cheddar cheese, chopped into small pieces

1 1/2 slices of American Cheese, chopped into smaller pieces

1/2 cup raw broccoli chopped small and thin 

1/2 tsp salt 

1/2 tsp pepper

1 tsp garlic powder

1 tsp onion powder


Preheat oven to 425 degrees. 

Whisk together the eggs, heavy cream, salt, pepper, garlic powder and onion powder. Set aside. 

Spray a muffin tin with nonstick cooking spray and evenly distribute the broccoli into 10 muffins. 

Then evenly distribute the cheddar and American cheeses. 

Pour in the egg mixture evenly between the 10 muffins. 

Bake for 20-25 minutes. 

Egg cups will be puffed up when you remove them from the oven. Let them cool about 5 minutes, they will deflate. Then remove them from the muffin tin and pack them up for an easy meal prep! Enjoy!
